I'm not sure I've seen it done this particular way, but entities that mess with their own documentation are pretty common. There's a whole tag for it, meta. That being said, format screws can enhance an SCP - but as it stands, it's just covering not very interesting shapeshifter.
I'd refine the idea and try to create a cohesion between what the entity is, how it's contained, and how it can edit its own documentation. The audio log is clever, but the tone might rub some people the wrong way - Foundation personnel are very competent, typically. Doesn't make sense for them to stumble through the log.
No big problems come to mind, but there's already an explained SCP that isn't really explained. It's because of that I don't really see this surviving on the main site. Plus, that interview is a huge Mr. Exposicion moment.
